 | A couple of newbie questions.
First, when I was installing, clicking "Next", I inadvertantly set up Read Hat (9) to boot directly into X-windows, which is not what I wanted. Is there some easy way to reverse this so I boot to the command line?
Second question: I installed "Everything", so I know KDE is there, but my installation defaulted to Gnome. How can I switch between them? Is one superior to the other in any substantial manner?
Thanks.

Yep, this question has been asked many, many, many times......
As root (using your choice of editor) edit the file /etc/inittab, the file is documented well enough so you can easily figure it out.

man switchdesk

Try both, use the one you like best.
FYI: Other Window Managers/Desktops (Gnome and KDE are just two Desktops) can be found here; http://xwinman.org/
FYI: RHL9 is EOL'd perhaps you might want to try something a bit newer like Fedora Core 2/3; http://fedora.redhat.com/
