I'm lived in japan, long time...

Japanese often used "Sasimi Quality" as fresh as suit for "Sasimi".
It's is also used ex.) Techniuqes in Engineering.
It's mean "Fresh as new roll from factory" in American english.

I think you should think, Japanese are eat only fresh fish as
"sasimi" and "susi". Other fish are cook with "YAKIZAKANA" : grilled
fish like as Mediterranean sytle, with Salt or "TARE" : "Syo-u" based
source, or "miso" based Source.
Also, japanese cook fish with boiled in broth ("[Ni-]T[/D]ale), also
with "Syo-u" based source / broth, "MISO" based source/ broth.

This category is over thousand kind. Like frech and other Europian
cooking.

Again, Japanese often used "Sasimi Quality" / "Eatable in rare", which
mean as "Top Fresh" quality.

Maybe you myth of original post is solved.
