I think you should think, Japanese are eat only fresh fish as "sasimi" and "susi". Also, japanese cook fish with boiled in broth ("[Ni-]T[/D]ale), also with "Syo-u" based source / broth, "MISO" based source/ broth.

Again, Japanese often used "Sasimi Quality" / "Eatable in rare", which mean as "Top Fresh" quality.
